Veggie patties – Greek style!

Veggie patties…I can hear all the meat eaters out there becoming instantly disinterested, but trust me these are so so tasty! Simple but full of flavour.  A perfect starter served with tzatziki or a main with fresh spaghetti. 

Ingredients:

  • 2 medium sized courgettes
  • Half a block of feta
  • 1 chilli
  • 3 spring onions
  • 1 cup buck wheat flour
  • 1 egg
  • Finely chopped parsley
  • Olive oil 

Optional:

First of all you need to prep your ingredients, so grate all your courgettes into a large bowl, chop up the spring onions, chilli, parsley and add those. Mash up the the feta and add this to the rest of the ingredients along with the buck wheat flour and the egg. And now mix with a wooden spoon. Season with salt & pepper. 

Add olive oil to a frying pan, enough to shallow fry the patties. Dampen your hands with a little water and shape the mixture into patties (they should feel sticky) – if you want, roll them in Sainsbury’s breadcrumbs (linked above) but if you’re gluten free I’d give this a miss. 

Shallow fry the balls until golden brown & transfer onto a plate with kitchen roll to absorb the excess oil & voila!! 

Serve with tzatziki for a real Greek experience. Tuck in!
